Caballo Bayo

Cabayo Bayo is a typical dish in Nicaragua. According to Wikipedia, first you serve on the plate a sheet of banana and you put on top a  corn tortilla. This will be added to taste a bit of each dish, among which include: shredded fried steak, chicken, pork, beans, blood sausage, guacamole, shredded cheese, sour cream, pico de gallo, chicharron, tajadas verdes, maduro frito. It is absolutely a delicious dish that we enjoy for festivities or celebrations.

“Food, in the end, in our own tradition, is something holy. It’s not about nutrients and calories. It’s about sharing. It’s about honesty. It’s about identity. Louise Fresco
